This bruising allows the tea leaves to start oxidizing. After the desired level of oxidation is reached, the leaves are pan-fired or baked to halt the oxidation process and lock in the flavors.<\/p>\n<p>The oxidation level of oolong tea can vary from around 10% to 80%, resulting in a wide range of flavors and aromas. Lightly oxidized oolongs tend to have a floral and fruity character, somewhat resembling green teas.
