Tombacco A DJ Oolong Tea

Typically, freshly picked tea leaves are withered under the sun and then shaken in bamboo baskets to bruise the edges of the leaves. This bruising allows the tea leaves to start oxidizing. After the desired level of oxidation is reached, the leaves are pan-fired or baked to halt the oxidation process and lock in the flavors.

The oxidation level of oolong tea can vary from around 10% to 80%, resulting in a wide range of flavors and aromas. Lightly oxidized oolongs tend to have a floral and fruity character, somewhat resembling green teas. In contrast, heavily oxidized oolongs have more robust and richer flavors, approaching those of black teas.
